Healthy Oat Muffins with Berries
Bake these muffins for a delicious and healthy breakfast! These oat muffins contain no butter, flour, or oil, but they are hearty and packed with fruit and fiber to keep you full through the morning. Oat muffins are a great portable snack that can be taken anywhere and work well to power a workout. I normally like to double this recipe, but the single version makes 12 muffins.

- Bake muffins at 350 degrees
- Bake Time 20 minutes
- Prep Time 20 minutes
- Makes 12 regular sized muffins
Ingredients:
- 2.5 cups old fashioned oats
- 1 banana
- 1/2 container applesauce (3.9 ounce cup)
- 2 eggs
- 1/2 cup skim milk
- 1/4 cup honey
- 1/4 cup brown sugar (raw cane)
- 1 Tsp vanilla extract
- 2 Tsp baking powder
- 1 Tsp baking soda
- 1/3 Tsp salt
- 2 Tsp cinnamon
- 1 cup fresh berries
Directions:
1. Preheat oven to 300 degrees.
2. Place oats on a baking sheet and bake in the oven at 300 degrees for approx. 8-10 minutes, stirring every 3-5 minutes. Bake until oats have a toasted smell.
3. Pour oats into a food processor and puree until they are a texture similar to flour. Pour oats into bowl and set aside.
4. add banana and 1/2 container of applesauce (half of the tiny 3.9 ounce cups they sell in packs) into food processor and puree until mixture is smooth. Pour on top of oats.
5. Add all ingredients Excluding berries. (add eggs, milk, honey, brown sugar, vanilla extract, baking powder, baking soda, salt, and cinnamon). Use a stand mixer or handheld mixture to blend thoroughly.
6. Change oven temperature to 350 degrees. If using convection bake, set to 325 degrees.
7. take a plate and chop raspberries, blackberries and blueberries into small pieces. Use enough to fill 1 cup. Add cup to already blended mixture and lightly stir.
8. Place into muffin tin (I like to use cupcake liners too) and bake for 20 minutes, or until you can insert a butter knife through the middle of muffin with no mixture remaining on knife.
