Fuego Chicken Recipe
Fuego may be the Spanish word for fire, but you can make this chicken as spicy or as mild as you would like. This recipe was created using inspiration from a restaurant favorite, El Tiempo Cantina in Houston. If you have ever tired their fajitas cooked durango style, this will taste similar and is a cheaper alternative to eating out. Your friends will be impressed by all of the flavor in this dish. Keep the ingredient list on hand to make Mexican style chicken breasts or some tasty fajitas
Serves: 2 people Prep Time: 30 minutes Cook Time: 20 minutes
You will Need:
- 1 Baking Pan
- 1 Pastry Brush
- 1 Meat Tenderizer
- 1/8 Cup Vegetable Oil
- 3 Tablespoons Unsalted Butter
- 2 Chicken Breasts
- 3 Strips of Bacon
- 1 White Onion (use approx. 1/2 of onion)
- 2 Jalapeños (fresh not canned)
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- Fresh Garlic (approx. 8 cloves)
- Cilantro
- 1 Lime
Spices:
- Sea Salt
- Black Pepper
- Chili Powder
- Paprika
- Garlic Powder
Instructions:
- Using your pastry brush, take vegetable oil and brush entire pan so that it is coated with a light oil layer.
- Chop onions, jalapenos, green bell pepper, red bell pepper, and garlic into desired sizes. Mix together and place evenly on pan. (for a milder version, limit the amount of jalapeno put into this mixture)
- Trim chicken breasts. Use a meat tenderizer to flatten chicken, then place on pan.
- Chop up slices of bacon and add to pan among the veggies. To make this easy, I buy microwave bacon and break up a few slices.
- Chop cilantro and add to entire pan including chicken. Use as much as you would like.
- Sprinkle black pepper and sea salt over chicken and entire pan. For spices, I recommend using a light layer of each spice and not worrying about exact measurements.
- Sprinkle chili powder, paprika, cumin, and garlic powder over chicken and entire pan.
- Melt 3 tablespoons of unsalted butter. Use pastry brush to coat chicken breasts, then pour remaining butter over all the vegetables in the pan. Use brush again to get all veggies nicely coated.
- Take half of a lime and squeeze lime juice all over pan including chicken. Slice the remaining half of the lime and add 2-3 thin slices on each chicken breast (remove after baking)
- Bake in oven at 400 degrees for 20 minutes or until chicken is fully cooked.Enjoy!
Best served with Mexican rice, beans, tortillas, avocado, and queso. Yum!
